Cheddar Style Cheese ~ ewes milk
Ossau in the valley of Bearn and Iraty in the forests of the Pays Basque in France combine to make this cheese. This gorgeous semi soft, subtlety flavoured cheese is made from Manech ewes milk. The cheese is sometimes produced in mountain huts and needs to mature for at least 90 days to develop its nutty flavour.
Ewe's milk cheese's are classically served with preserved cherries or cherry conserve. It matches well with sweet fruity dessert wines like Noble Riesling and Sauternes. Provided in a 500g wedge.
